African Chow Mein

This recipe comes from a family friend and neighbor through a church cookbook, but the origin of the recipe itself does come from Africa. African Chow Mein is based on a dish that was created in Africa from restaurants in the Chinatowns that had sprung up in larger cities in the southern half of the African continent. It is a "one pan" meal if you have a large enough skillet. (12" cast iron pan works). Alternately, a 9x13 baking dish will also work for the baking step.
