Another delicious treat that Mom made were here homemade apple fritters. Sometimes she made them to serve with breakfast. Crispy on the outside with a coating of cinnamon and sugar, warm and moist on the inside and loaded with diced up apples.
Because apples both brown fast when cut, and have a lot of moisture I do the following. Once the apples are diced they go into a solution of water and lemon juice (about 1 tbsp of lemon juice to 1 quart of water). When ready to use, drain in a strainer and spread over paper toweling to partially dry before incorporating in the mix.
