Arancini are Italian rice balls that are stuffed, coated with bread crumbs and deep fried. This recipe cooks the rice with ham and onions in a chicken broth, then cooled and mixed with parsley and Parmesan cheese. Then shaped into balls and stuffed with mozzarella. Serve warm. Optionally, they can be served with a marinara, Alfredo or garlic butter, but are perfect on their own.
