Aunt Gertie's Oatmeal Cake

Auntie Gertie was a wonderful cook. She lived a very simple life, cooking on a wood stove and oven, and hand pumped water. And she had a collection of recipes that she used to make all sorts of delicious baked goods and meals but most were never written down. This recipe was found in a 'Our Lady of Mount Carmel' church cookbook from Opole, MN. The recipe uses prepared oatmeal in the batter and a coconut topping that must be applied when the cake is hot out of the oven for best results.




Prep: 15 minutes

Bake: 40 minutes

Makes a 9 x 13 cake
