Kho, in Vietnamese, means to braise or stew. This recipe is for Bo Kho, or beef stew. Simple and fresh ingredients make a beef stew with SE Asian flavor, and a bit of heat. Serve as a stew, with bread. Or serve with thin, rice noodles. To serve as a soup, add beef broth and season to taste.
