Caldo Verde

A Portuguese soup where the name literally translate to "Green Soup" which is a better translation than the Italian "Warm Green". Potatoes cooked until super soft in a water or broth base and then blended. The potatoes add flavor, creaminess and act as a thickener. Fried sausage and fresh, chopped kale add flavor and texture. Server hot, with bread and salad for a light and simple supper.


Prep: 20 minutes

Cook: 40 minutes

Serves: 6
