Chicken and Wild Rice Soup

Wild rice soup is a mixture of soft and chewy grains that has a definitely different 'mouth-feel' then ordinary rice grains. DO NOT try and substitute white or brown rice in this recipe, as they will tend to become mushy and will ruin the texture and taste of this soup. You can substitute the cooking of the chicken by using roasted or canned cooked chicken but the freshness of the browned chicken breast really adds to the flavor of the soup.

Prep: 15 minutes

Active Cook: 20 minutes

Passive Cook: 40 minutes

Total Time: 75 minutes

Yield: 8-10
