Chicken Saltimbocca

Saltimbocca in Italian literally means 'jump into the mouth'. It generally is a rolled cutlet of chicken, pork, veal or beef and stuffed with herbs, cheese and other flavorings. This recipe is a variation where the chicken cutlet is not rolled but layered with prosciutto and cheese and served with sautéed spinach. Serve over potatoes, rice, pasta or, my preference, polenta. Prep: 15 minutes

Cook: 25 minutes

Total: 40 minutes

Serves: 4-6
