Chicken a la King ('chicken in the style of King') is a dish consisting of diced, cooked chicken in a cream sauce, often with sherry, mushrooms, and vegetables. The traditional manner is to use green peas and pimentos but this version substitutes asparagus and red bell pepper, as well as adding onion and garlic. Serve warm over rice, egg noodles or, as I prefer, over freshly made buttermilk biscuits.
