Chilled Udon Ponzu

Ponzu is a Japanese sauce consisting of citrus juices mixed with a base of rice vinegar and soy sauce. It is often used as a dipping sauce. Udon is a Japanese wheat noodle, likened to spaghetti but not as dense. The combination of the Udon, served cold for this dish, and Ponzu, make for a very refreshing cold pasta salad. Adding in oven broiled cherry tomatoes (sweetness) and fresh sliced cucumbers (earthiness), makes for a complete dish that can be served as a side or a main. Make ahead of time (1-2 days) if desired. Perfect for at home or for a summer potluck barbecue, as a way to avoid a mayonnaise based salad combined with the hot summer sun.

Prep TIme: 20 minutes

Cook Time: 20 minutes (broiling tomatoes/boiling noodles)

Serves: 4 Main Course -or- 8 Side Dish
