Unlike an American fruit pie, a Crostata is made with prepared jam, either store bought or quick made, homemade jam. You can substitute and preferred flavor of jam. The dough can be hard to work with if too warm. The recipe indicates a 30 minute refrigeration period for the dough but that is a minimum. Waiting and hour or too, for the butter to firm up, is a more preferential wait period. The dough can be made 24 hours before using.
