Eggplant Parmigiana

An Italian dish made with fried, sliced eggplant layered with cheese and marinara sauce, then baked. This dish takes a bit of time, especially that the eggplant needs to rest for about an hour at the start of the process to weep bitter juices from the eggplant. No matter, the recipe is well worth the time.
