This is a an easy recipe for brownies that will put others to shame. Made with Dutch process cocoa for a rich flavor. You can use regular process cocoa, like Hershey's, but you will need to add a bit of baking soda or the flavor of the brownie could be lightly acidic, the brownies will be lighter in color. The melting of butter and combing with the sugar help to create the glossy top of the brownie. Avoid over mixing to prevent the brownie from becoming more cake like. Hand stirring is the best option to avoid over mixing.
Prep: 15 minutes
Bake: 30 Minutes
Total: 45 Minutes
Yield 1 - 9 x 13 pans (2 dozen - 2"x2" brownies)
NOTE:
I buy Dutch process cocoa through Amazon but I have see other brands for purchase at some Walmart stores. Espresso powder, while optional, does add some terrific enhanced flavor. Again, I buy through Amazon but could be available at Walmart or possibly other area groceries. Also, espresso powder can be made using used coffee grounds that are dried in the oven and then ground fine.
