Gingerbread has a wonderful flavor for anytime of year but is especially pleasant at Christmas time. As a child my mom would recipe to dozens of gingerbread men and then spend hours decorating them with the names of all of cousins, neighborhood children and family friends. This recipe can also be used for making gingerbread houses and any shape of cookie cutter. Icing the cookies for decoration is good but I like to keep some plain to enjoy with a cup of coffee or even a Tom and Jerry
Makes about 5 dozen 4 inch cookies
Prep: 15 minutes
Rest: 2-3 hours
Bake: 5-6 minutes per pan
