Kapusniak (Sauerkraut Soup)

Kapusniak, pronounced “Kah-Pus-Knee-Ack, is traditionally a vegetarian soup, often times served during Lent. This recipe is a family favorite and adds meat in the form of kielbasa, spare ribs and bacon. If you want to go the vegetarian route, skip the meat and use vegetable broth in place of the water (2 quarts). Also double the carrots and potatoes.


Recipe makes 5 quarts. Or, 20 - 1 cup servings

Prep Time: 1.5 hours (includes cooking of the ribs)

Cook Time: 1 hour

Total time to serve: 2.5 hours
