The word 'biscottus' in Latin means "twice-cooked". This can refer to any item that is twice-cooked. In English we think only of the crunchy, twice baked, flavorful cookie or biscuit. The biscuit itself was developed in Tuscany and meant to be a food that could be carried on long journeys. This recipe is for a lemon biscotti. Full of lemon flavor from fresh ,lemon juice and zest, but still with the traditional almond flavor too.
