Miso Pork Chops with Bok Choy

This is a full meal recipe consisting of seasoned and fried pork chops served over a seasoned white rice and topped with a miso-butter sauce and a SE Asian apple slaw. Garlic and ginger sautéed baby bok choy completes the dish. The ingredients and steps are in an order that allows you to make or start one of the components while another is cooking for optimal kitchen time. It is a delicious meal.

Prep: 15 minutes

Cook: 30 minutes

Serves: 4-6

Miso paste can be found in most supermarket produce sections, usually next to the tofu and wonton wrappers. Any standard miso paste will do but the white (sweet) tends to be the favorite.

Mirin is a rice wine that is used commonly to enhance the flavor of rice. Sesame oil is also a great flavoring ingredient but be careful. It is strong and too much can spoil a dish. Both of these items are available in the SE Asian or Ethnic Food section of many supermarkets, as well as Asian markets in the area.

Regular bok choy can be substituted for baby bok choy, but it will take more time to cook and the leaves are not as tender.
