Moqueca Baiana (Brazilian Fish Stew)

A one pan dish composed of a cooked fish and a tomato and coconut based broth. Bright spices and vegetables complete this flavorful dish. If you like, you can substitute the fish for shrimp, chicken or pork. Adjust stewing time longer, if need, for the pork. Serve over rice.
