Pasta e Fagioli

A literal translation of 'Pasta e Fagioli' is "pasta and beans", this Italian soup is a hearty mixture of both. Simple and fast, taking less than hour if you are in a hurry. For the pasta, any choice of small, tube pasta like macaroni, ditalini or cavatelli will do. I make the soup using fresh products but doing so will take more time, so for the quicker method use canned beans and tomato product.


Soup can be frozen. When ready to use, thaw in the refrigerator to prevent the pasta from becoming mushy.


Serves 6-8

Prep: 15 minutes

Cook: 45 minutes
