There are a lot of recipes for peanut butter cookies, and I have tried several of them, but I found this one the best for a cookie that is consistently light and crispy on the outside and soft but not overly chewy on the inside. I think using butter in place of the original shortening as well as using baking soda instead of baking powder are the keys.
It is a quick recipe from mixing to baking, no more than 40 minutes total time.
The recipe makes 24-36 cookies depending on the size of the drop
