Pistachio-White Chocolate Cheesecake

A delicious, light flavored cheesecake that uses boxed pistachio pudding and almond extract to get wonderful flavor throughout. Choose your type of crust by picking a chocolate cookie to work with. Chocolate graham crackers or Oreos both work well. The cake needs plenty of time to cool before eating so this is something that could be made early in the day or the day before.
