Porcupine Meatballs w/ Sauerkraut

Porcupine meatballs are standard meatballs mixed with uncooked rice in a tomato sauce. As the rice cooks, it pokes out of the sides of the meatballs to remind of a porcupine. This recipe cuts down on the usual sweetness of the sauce and adds a light sour flavor from sauerkraut. Drain the sauerkraut, rinse and squeeze to cut down on the saltiness.


Serve over mashed potatoes, cooked rice, polenta or another cooked starch.


Prep: 15 minutes

Cook: 45 minutes

Serves: 4-6
