Pork Roulade with Arugula and Mozzarella

A roulade is simply a flatten protein that is rolled with a filling and then seared and roasted. The highlight of this recipe is the red wine sauce that is made with the drippings from the seared and roasted pork. Serve with you favorite starch and vegetable. Try this with a simple polenta and garlic roasted asparagus.
