A great side dish for a picnic, barbecue or fried chicken dinner. Peeling and dicing the potatoes before boiling makes for a short cook time. The recipe uses pickle relish in the dressing which gives a nice, light pickle flavor. Adjust the bitter, sweet, salty or sour to your taste by adjusting the amount of mustard, sugar, salt or lemon juice. Adding some additional pickle relish also changes the flavor by cutting the bitterness of the yellow mustard.
