A one-pan meal that was inspired by Ro*Tel and Velveeta queso dip that my family has enjoyed for years. To make, you will need a Dutch oven or large skillet that has a cover. This recipe does not use Velveeta but instead it can be made with any combination of semi-hard to hard cheeses like cheddar, Colby or Monterrey, etc.
This is a serve hot meal that can be prepared in a short period of time, complete to table in under an hour and serves 6-8 people.
