Rouladen

Rouladen is a traditional German dish featuring long, thin strips of meat spread with mustard and filled with bacon, onions, and pickles. This recipe uses pork loin steaks (boneless pork chops) and adds apple to the filling mix. Once assembled and browned, a braising mixture of vegetables, wine and stock is prepared and the browned rouladen are braised in the mixture in the oven. Finally the liquid from braise is prepared into gravy. Serve hot with potatoes or noodles, traditionally. This recipe makes 4 servings, but can easily accommodate 8 servings by only adding 4 more completed rouladen.
