Salisbury Steak

This dish, consisting of ground beef in an onion gravy, has been an American staple since the early 1900's. It was originally created by a doctor, J. H. Salisbury, in the 1800's. He was one of the first believers in a high protein and low carbohydrate diet. He believed that vegetables and starches caused digestive issues and other diseases. In any case, I prefer to serve with with mashed potatoes and a green vegetable.
