Scalloped Potato Hotdish

My father-in-law had this recipe written down on the back of an envelope. And I am always looking for casserole or hotdish (Minnesota speak) ideas. The original recipe as he had written it, used Cream of Mushroom soup, but you can really use a cream soup of choice (I used Cream of Bacon the last time I made the recipe). A tip when making is to layer the potatoes in a single layer, apply the soup mixture and pork without laying the potatoes directly on top of one another. If you don't have a 2 quart casserole or 11x7 baking dish, you can use and 8x8 pan but expect to up the baking time a bit. Check the potatoes after the 1 hour baking time and bake longer if the potatoes are not quite done.
