Spaghetti Squash Alfredo (w/Pancetta and Peas)

Spaghetti squash can be a delicious alternative to pasta in this Alfredo sauced dish. Simple to make. The squash can be baked and shredded ahead of time and allow to set in refrigerator, bring out to rest at room temperature when starting to make the sauce. Leftovers can be stored in the refrigerator. When reheating, do so on the stove top, as reheating in the microwave can cause the sauce to break and become a less pleasing texture.

Prep: 15 minutes

Cook: 45 minutes

Total: 60 min

Serves: 4-6
