A hearty comfort food with simple, but bold, flavors. The recipe uses an oven safe skillet but the filling and topping can be assembled in a 9x13 as well. Adjust seasonings to taste. The recipe, as delivered, is for a mild tasting dish, but more heat can be added with added red pepper and/or more jalapenos or serrano peppers. Leftovers can be refrigerated for 4-5 days and reheated in the oven or microwave. Serve with sour cream and hot sauce. A light garden salad makes for a great side.
