Tartiflette

Tartiflette is a French gratin dish. A casserole of sliced potatoes, pancetta, and onions, layered with aged cheese and baked to a gooey perfection.


Substitute bacon or a some fatty ham for the pancetta. Choose your favorite cheese, but grate it by hand for the best results. You can use red



**Pre-shredded cheese is fine for salads and fresh dishes but it has some starches added that prevent it from melting and mixing the way one would hope.


Prep: 20 minutes

Cook: 30 minutes

Serves: 4-6
