A simple, tasty treat from overripe banana. Make plain or add in chopped nuts and/or chips. I prefer using smaller loaf pans. One regular loaf pan equals 3 of the smaller pans. if using the smaller pans, do not adjust the temperature, only the baking time. Test doneness by inserting a toothpick or wood skewer and checking that it has no unbaked batter.
Prep: 15 minutes
Bake: 60 minutes (35 minutes for small loaves)
Yield:1 large loaf (3 small loaves)
