White Cheddar Macaroni and Cheese

This baked version of macaroni and cheese is as versatile as it is simple. Substitute any semi-hard cheese for the white cheddar...but a key to texture and taste is to freshly grate the cheese. Prepackaged grated cheeses tend to have added starches that can affect the taste and texture of dishes that used melted cheese. Use any medium dried pasta in place of the macaroni. Season to your taste.
